with the topping
so we had a mac and cheese battle last week, but it turned out not to be much of a fight... with everyone so busy with work and papers, i was the only one who made a dish.
the cheese was a mix of mild cheddar and a little colby. i used the tyler florence recipe, which starts with a rue base and whole milk. it has an onion, garlic, bacon topping which is awesome. i added bread crumb as well to add a little more crunch.
i wish the cheese had more kick to it, so maybe all sharp cheddar will work better the next time around. a little parm cheese might work as a topping as well since it has a strong nuttiness to it. at least the decent stuff does anyway.
all in all it wasn't a bad dish. i wish i had more of it before everyone devoured it.
