chili take 3 & cornbread

so no new photos here (the stuff looks exactly the same, but tastes better!)

here are the new changes:
  • addition of small cuts of steak in addition to the coarsely ground beef (improved mouth feel)
  • tomato paste and a reduction in diced tomatoes (reduces the liquidity of the chili while maintaining the tomato flavor)
  • no broth of any kind (trying to minimize the liquid in general)
  • addition of lime juice later in the cooking process (lime was always in there, but much of the acidity was cooking out or absorbed since it was added too early)
  • more chili powder to amp up the chili flavor in the dish
  • more jalepenos for heat
  • another, but more mild chile for more chile flavor and some heat
overall impression: definitely the best version so far, i've also increased the batch size in order to make leftovers for the next day, but it never lasts more than one extra day with three guys in the house

new things to try for round 4:
  • cook things slower, current cook time is less than 35 minutes!
  • more vegs of some kind, maybe leeks, i love leeks
cornbread
not to be overshadowed, the cornbread includes jalepenos, corn kernals, and pepper jack cheese. this batch was a little undersweetened. i like a touch of honey in my cornbread to balance the heat of the chiles and the richness of the cheese. it was also a bit overcooked... so it was a little drier than when my sister makes it.
