one of many resolutions


as my sisters will tell you with confidence. i'm not a very tidy cook. my focus has always been about the food and if it took all my clean pots and pans, then so been it. when making any meal with more than one course, my kitchens would always look like a bomb had exploded in them.

but after reading kitchen confidential this past fall, i'm a man on a mission. to keep my workstation clean. but what does that mean?
  • always always always have clean kitchen towels ready to wipe things down, hold hot pots and wipe my hands
  • always keep my knife sharp and ready to use
  • clean my workstation after every step
  • rinse all dishes, pots and utensils as soon as possible and put in the dishwasher (and off the kitchen counter or sink)
  • clean whenever i have time between steps in the cooking process (i.e. waiting for the pasta water to come to a boil? time to clean the cutting board)
my goal is to have the kitchen almost completely clean by the time i serve dinner.
